  • 2 ribeye steaks (about 1 inch thick)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter (2 for steak and 2 for sauce)
  • 6 garlic cloves (2 smashed, 4 minced)
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste

Instructions

  1. Pat the steaks dry and season generously with salt and pepper.
  2. Heat a cast iron skillet over medium-high heat; add olive oil.
  3. Sear the steaks for 3-4 minutes per side for medium-rare; adjust cooking time as needed.
  4. Add butter, smashed garlic, and herbs to the skillet while cooking; baste the steaks with melted butter.
  5. Remove from skillet and let rest for 5-7 minutes.
  6. In the same skillet, reduce heat and melt remaining butter; sauté minced garlic until fragrant.
  7. Stir in heavy cream, bringing it to a simmer; mix in Parmesan cheese, Dijon mustard, salt, and pepper until smooth.
  8. Slice the rested steaks against the grain and serve topped with creamy garlic sauce.
