  • 6 garlic cloves (2 smashed, 4 minced)
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh rosemary or thyme

Instructions

  1. Pat steaks dry and season generously with salt and pepper.
  2. Heat a cast iron skillet over medium-high heat; add olive oil.
  3. Sear steaks for 3-4 minutes per side for medium-rare; adjust time for desired doneness.
  4. Add butter, smashed garlic, and herbs to the skillet; baste the steaks as they cook.
  5. Remove steaks from heat and let them rest for 5-7 minutes.
  6. In the same skillet, melt remaining butter over medium heat; sauté minced garlic until fragrant.
  7. Stir in heavy cream, Parmesan cheese, Dijon mustard, salt, pepper, and smoked paprika; simmer until thickened.
