Ingredients
- 3 tbsp bacon grease or olive oil
- 1 lb ground turkey or preferred ground meat
- 4 ribs celery, diced
- 1 red bell pepper, diced
- 1/2 small onion, diced
- 3 cloves garlic, minced
- 3/4 tsp paprika
- 1/4 tsp oregano – dried
- 1/4 tsp thyme – dried
- 1/8 tsp cayenne pepper
- 1 1/2 tsp salt – divided
- 1 tsp garlic powder – divided
- 1/4 tsp black pepper
- 1/4 cup water or chicken stock for added flavor
- 12 oz frozen cauliflower rice
- Sliced green onions for garnish
Instructions
- Heat bacon grease or olive oil in a heavy-bottomed skillet over medium-high heat. Add ground meat and season with salt and pepper. Cook until browned.
- Reduce heat to medium. Add diced onion, celery, and bell pepper; cook until tender. Stir in garlic and spices; cook for an additional minute.
- Add frozen cauliflower rice and water or chicken stock; mix well and season again. Cook until the cauliflower is soft and liquid has evaporated.
- Garnish with sliced green onions before serving.
