  • 2 cups vanilla wafer cookies, finely ground (250 g)
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons light brown sugar
  • 1 tablespoon lime zest, packed (67 key limes)
  • 5 large egg yolks
  • 22 ounces sweetened condensed milk (1 14-ounce can and ¾ cup from 2nd can)
  • 1 cup freshly squeezed lime juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. For the crust, mix crushed vanilla wafers, melted butter, and brown sugar; press into a 9×13 inch baking pan.
  3. Bake the crust for 10 minutes until golden, then cool slightly.
  4. In a bowl, whisk egg yolks until light; add condensed milk, lime juice, and zest; blend well.
  5. Pour the filling over the cooled crust and bake for 15-20 minutes until set.
  6. Cool completely at room temperature before refrigerating for at least 2 hours.
  7. Whip heavy cream with powdered sugar until soft peaks form; top chilled bars before serving.
