Ingredients

Scale
  • 5 mini cucumbers (or 23 regular cucumbers)
  • 1 tsp salt
  • 1.5 tsp soy sauce
  • 1 tsp minced garlic
  • 3 tbsp rice vinegar
  • 23 tsp chili oil (adjust for spice level)
  • 3 tsp sugar
  • 1 tsp sesame oil
  • Optional toppings: sesame seeds, green onions

Instructions

  1. In a small mixing bowl, combine minced garlic, sugar, soy sauce, rice vinegar, chili oil, and sesame oil to create the dressing.
  2. Slice cucumbers thinly or spiralize them for fun shapes. Sprinkle salt over the cucumbers and let them sit for 8-12 minutes.
  3. After resting, rinse the cucumbers under cold water and lay them on paper towels to remove excess moisture.
  4. Combine the rinsed cucumbers with the dressing in a bowl and toss until well coated.
  5. Garnish with optional sesame seeds and green onions before serving.
