  • 8 large eggs
  • 1/3 cup milk
  • 2 cups frozen hash browns (thawed)
  • 1 cup shredded cheddar cheese
  • 6 slices bacon (cooked and crumbled)
  • 1/4 cup green onions (chopped)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F and grease or line a muffin tin.
  2. In a large bowl, whisk together the eggs and milk.
  3. Stir in the thawed hash browns, 3/4 cup cheddar cheese, crumbled bacon, green onions, garlic powder, salt, and pepper until well combined.
  4. Evenly fill each muffin cup with the mixture and top with remaining cheddar cheese.
  5. Bake for 20–25 minutes until eggs are set and tops are golden brown.
  6. Allow to cool for 5 minutes before removing from the tin.
