  • 12 ounces pasta
  • 3 lobster tails (5 ounces each)
  • 1 cup unsalted butter (2 sticks)
  • 4 cloves garlic (1 smashed, 3 minced)
  • 1/2 tsp kosher salt
  • 1 tsp fresh thyme
  • 2 tsp fresh basil
  • 1/4 tsp red pepper flakes
  • Zest of half a lemon
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup reserved pasta water

Instructions

  1. Cook the pasta in boiling water until al dente; drain and reserve some cooking water.
  2. Use kitchen shears to cut the lobster shells and poach them in melted butter with smashed garlic until opaque (about 4-5 minutes). Chop into chunks.
  3. In the same pan, sauté minced garlic, thyme, basil, lemon zest, and red pepper flakes for about a minute. Add the cooked pasta and reserved water; toss to combine.
  4. Gently fold in the lobster meat and serve warm with additional herbs and parmesan on top.
