- 2 bay leaves

- 1 tbsp Cajun seasoning
- 1 tbsp Worcestershire sauce
- Hot sauce to taste
- Salt and pepper to taste
- 2 green onions, chopped
- Fresh parsley, chopped (for garnish)

Instructions
- In a large pot over medium heat, combine flour and vegetable oil to create a roux. Stir continuously for about 20–30 minutes until it turns deep brown.
- Add the chopped green bell pepper, celery, onion, and garlic to the roux. Cook until softened (5–7 minutes).
- Stir in sliced sausage along with bay leaves and thyme; cook until browned.
- Add stock and optional diced tomatoes; bring to boil then reduce to simmer for about 45 minutes.
- Incorporate okra (or filé powder) and simmer for an additional 10 minutes.
- Mix in shrimp and crab; cook until shrimp are pink (5–7 minutes).
- Finish with Worcestershire sauce and hot sauce; adjust seasoning if necessary. Serve over white rice.
