  • 1 cup dried red kidney beans (soaked overnight)
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • 3 cloves garlic (chopped)
  • Salt to taste
  • Black pepper to taste
  • 1 cup long white grain rice

Instructions

  1. Heat oil in a large pot and cook the sliced vegan sausages until browned.
  2. Add diced onion, celery, and bell pepper; sauté until onions are translucent.
  3. Stir in Cajun seasoning, vegetable stock, bay leaves, thyme, and garlic.
  4. Drain soaked kidney beans and add to the pot along with black pepper and vinegar.
  5. Cover and simmer for 1 to 1½ hours until beans are soft, adding water if necessary.
  6. Cook rice according to package instructions.
  7. For a thicker stew, mash some beans against the pot's side before serving.
