  • ½ small red onion
  • ½ cup green olives
  • 1 jarred roasted red pepper
  • 67 jarred artichoke hearts
  • Fresh dill and parsley
  • 1 lemon (zest and juice)
  • Olive oil
  • Honey (or maple syrup)
  • Garlic
  • Spices

Instructions

  1. In a large bowl, combine butter beans, sliced onion, olives, roasted pepper, artichoke hearts, dill, parsley, lemon zest, and salt.
  2. In a saucepan over medium heat, whisk together lemon juice, olive oil, honey (or maple syrup), garlic, red pepper flakes, cumin, and cayenne until frothy. Remove from heat.
  3. Pour the marinade over the bean mixture and toss well to combine. Let sit for at least 10 minutes; ideally 30 minutes to enhance flavors.
  4. Serve on toasted sourdough or enjoy as is.
