Ingredients
- 3/4 cup unsalted butter
- 1 cup sugar
- 1 whole egg
- 1 egg yolk
- 1 Tbsp vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 pkg (8 oz.) cream cheese
- 1/4 cup sugar
- 1/2 tsp vanilla
- Assorted fresh fruits for topping
Instructions
- In a stand mixer, beat softened butter and sugar until combined. Add egg, yolk, and vanilla; mix well.
- In another bowl, sift flour, salt, and baking powder. Gradually mix into the butter mixture until just combined. Chill dough for at least one hour.
- Preheat oven to 350°F (175°C). Roll out chilled dough to 1/2 inch thick. Cut into shapes with cookie cutters and place on a parchment-lined baking sheet. Bake for 9-10 minutes until golden.
- Beat softened cream cheese with sugar and vanilla until smooth.
- Once cookies cool, spread cream cheese frosting on top and add assorted fresh fruits as desired.
