Ingredients

  • 3/4 cup unsalted butter
  • 1 cup sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 Tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 pkg (8 oz.) cream cheese
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • Assorted fresh fruits for topping

Instructions

  1. In a stand mixer, beat softened butter and sugar until combined. Add egg, yolk, and vanilla; mix well.
  2. In another bowl, sift flour, salt, and baking powder. Gradually mix into the butter mixture until just combined. Chill dough for at least one hour.
  3. Preheat oven to 350°F (175°C). Roll out chilled dough to 1/2 inch thick. Cut into shapes with cookie cutters and place on a parchment-lined baking sheet. Bake for 9-10 minutes until golden.
  4. Beat softened cream cheese with sugar and vanilla until smooth.
  5. Once cookies cool, spread cream cheese frosting on top and add assorted fresh fruits as desired.
