Ingredients
- 1¼ lbs. boneless skinless chicken breasts (thinly sliced)
- 3 tablespoons vegetable oil
- 2 large eggs
- 1½ cups sliced shiitake mushrooms
- 4 cups sliced green cabbage
- 3 green onions (thinly sliced)
- ⅔ cup hoisin sauce
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 2 cloves minced garlic
- 1 tablespoon grated ginger
- 2 teaspoons cornstarch
- 1 teaspoon sesame oil
- ½ teaspoon freshly ground black pepper
- 2 tablespoons mirin
Instructions
- In a bowl, whisk together all marinade ingredients. Reserve ½ cup for later.
- Marinate chicken strips in the remaining mixture for 10–15 minutes.
- Heat vegetable oil in a skillet; cook marinated chicken until browned (2–3 minutes per batch). Set aside.
- Sauté mushrooms in the same skillet until browned; remove and set aside.
- Cook beaten eggs in the skillet until set; slice into strips.
- Stir-fry cabbage until slightly wilted; add cooked chicken, mushrooms, and egg strips back to the skillet.
- Pour reserved marinade over everything; toss gently until heated through.
