  • lbs. boneless skinless chicken breasts (thinly sliced)
  • 3 tablespoons vegetable oil
  • 2 large eggs
  • 1½ cups sliced shiitake mushrooms
  • 4 cups sliced green cabbage
  • 3 green onions (thinly sliced)
  • ⅔ cup hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves minced garlic
  • 1 tablespoon grated ginger
  • 2 teaspoons cornstarch
  • 1 teaspoon sesame oil
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons mirin

Instructions

  1. In a bowl, whisk together all marinade ingredients. Reserve ½ cup for later.
  2. Marinate chicken strips in the remaining mixture for 10–15 minutes.
  3. Heat vegetable oil in a skillet; cook marinated chicken until browned (2–3 minutes per batch). Set aside.
  4. Sauté mushrooms in the same skillet until browned; remove and set aside.
  5. Cook beaten eggs in the skillet until set; slice into strips.
  6. Stir-fry cabbage until slightly wilted; add cooked chicken, mushrooms, and egg strips back to the skillet.
  7. Pour reserved marinade over everything; toss gently until heated through.
