Ingredients
- 6 chicken thighs (bone-in, skin optional)
- 2 cups Basmati rice
- 3 ½ cups chicken stock
- 1 onion (finely chopped)
- 10 garlic cloves (crushed)
- Spices: turmeric, cumin, coriander, oregano
- Olive oil, lemon juice
- Salt and pepper
Instructions
- Marinate the chicken: Mix lemon juice, spices, garlic, salt, and pepper in a bowl. Coat the chicken thighs and refrigerate for at least 1 hour.
- Preheat the oven to 350°F.
- Sear the marinated chicken in an ovenproof skillet until browned on both sides.
- In the same skillet, sauté onion and garlic, then add rice and stock.
- Place seared chicken on top of the rice mixture and cover. Bake for 20 minutes or until rice absorbs liquid.
- Fluff rice gently before serving; garnish with lime wedges, yogurt, and coriander.
