Ingredients

  • 2 cups heavy cream
  • 1/2 cup unsalted butter
  • 6 cups sugar (divided)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1 1/2 cups chopped walnuts or pecans

Instructions

  1. Lightly grease a 9×13-inch baking dish.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes until fully liquefied.
  3. In a large saucepan, combine the remaining 4 cups of sugar and heavy cream. Simmer on low heat.
  4. Once the first batch of sugar is melted, pour it into the cream mixture while stirring continuously.
  5. Increase heat to medium and cook until it reaches the softball stage (244°F).
  6. Remove from heat and stir in baking soda until well mixed.
  7. Add butter and vanilla extract; stir until smooth.
  8. Let cool for 20 minutes before mixing in chopped nuts.
  9. Transfer to the greased baking dish and let cool completely before slicing into squares.
