- 2 cups Heavy Cream
- 1/2 cup Unsalted Butter
- 6 cups Sugar (divided)
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Baking Soda
- 1 1/2 cups Chopped Walnuts or Pecans
Instructions
- Lightly grease a 9×13-inch baking dish.
- In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring constantly until liquefied (about 20 minutes).
- In a large saucepan, combine the remaining sugar and heavy cream; simmer on low heat.
- Once the first batch of sugar is melted, pour it into the cream mixture while stirring continuously.
- Increase the heat to medium and cook until reaching softball stage (244°F).
- Remove from heat, stir in baking soda, then add butter and vanilla.
- Allow to rest for 20 minutes before mixing in chopped nuts.
- Pour into the prepared dish; cool for 1-2 hours before slicing into squares.
