Ingredients
- 2 teaspoons minced fresh garlic
- 1 teaspoon minced fresh ginger
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons toasted sesame oil
- 2 tablespoons red curry paste
- 1/2 cup full-fat coconut milk
- 5 cups chopped bok choy
- 20 frozen dumplings (chicken/vegetable or pork/vegetable)
- Fresh cilantro, green onions, and sesame seeds for garnish
Instructions
- In a mixing bowl, combine garlic, ginger, soy sauce, rice vinegar, sesame oil, red curry paste, coconut milk, and water. Mix well.
- Heat a large frying pan over medium heat. Add bok choy and sauté for 3–4 minutes until slightly wilted.
- Place frozen dumplings on top of the bok choy.
- Pour the sauce over the dumplings and bok choy.
- Cover the pan with a lid and simmer for about 15 minutes until dumplings are cooked through.
- Garnish with cilantro, green onions, and sesame seeds before serving.
