  • 2 teaspoons minced fresh garlic
  • 1 teaspoon minced fresh ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons red curry paste
  • 1/2 cup full-fat coconut milk
  • 5 cups chopped bok choy
  • 20 frozen dumplings (chicken/vegetable or pork/vegetable)
  • Fresh cilantro, green onions, and sesame seeds for garnish

Instructions

  1. In a mixing bowl, combine garlic, ginger, soy sauce, rice vinegar, sesame oil, red curry paste, coconut milk, and water. Mix well.
  2. Heat a large frying pan over medium heat. Add bok choy and sauté for 3–4 minutes until slightly wilted.
  3. Place frozen dumplings on top of the bok choy.
  4. Pour the sauce over the dumplings and bok choy.
  5. Cover the pan with a lid and simmer for about 15 minutes until dumplings are cooked through.
  6. Garnish with cilantro, green onions, and sesame seeds before serving.
