  • 1½ cups uncooked basmati rice
  • 6 skinless chicken thighs
  • 2 tsp smoked paprika
  • 1 cup chopped onion
  • 3 cups low sodium chicken stock
  • Olive oil
  • Butter
  • Mixed herbs
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
  • Green onions for garnish

Instructions

  1. Combine smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper in a small bowl. Rinse the basmati rice until the water runs clear.
  2. Season the chicken thighs with the spice mixture.
  3. Heat olive oil in a cast iron skillet. Sear the chicken thighs for about 3 minutes per side until golden brown; remove and set aside.
  4. In the same pan, sauté chopped onions until translucent. Add butter and toast the rinsed rice for 1-2 minutes.
  5. Pour in chicken stock and add reserved seasoning. Arrange seared chicken over rice mixture, cover, and cook on low-medium heat for 15-20 minutes until rice is tender.
  6. Garnish with green onions before serving.
