- 1 cup dry orzo
- 2 cups chopped spinach
- 2 cups chopped kale
- 1/2 cup shaved parmesan
- 1/3 cup pumpkin seeds
- 1/3 cup marinated olives
- 1/4 cup olive oil
- Juice from 1 lemon, about 3 tbsp
- 1 tsp lemon zest
- 1 garlic clove, crushed
- 1 tsp honey
- 1 tsp dijon mustard
- Salt & pepper
Instructions
- In a large pot, bring 2 cups of salted water to a boil. Add the orzo and cook for 8-12 minutes until tender. Drain and cool.
- In a salad bowl, combine kale, spinach, cooked orzo, pumpkin seeds, olives, and parmesan.
- For the dressing, whisk together olive oil, lemon juice, lemon zest, garlic, honey, dijon mustard, salt, and pepper until well combined.
- Pour the dressing over the salad mix and toss to coat evenly. Adjust seasoning if needed.
- Serve topped with extra pumpkin seeds and parmesan.
