  • 1 small yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 46 garlic cloves, minced
  • 1 can crushed tomatoes
  • 1 can fire-roasted diced tomatoes
  • 3/4 cup uncooked long grain white rice
  • 6 cups low sodium beef broth
  • Fresh basil, oregano, parsley

Instructions

  1. In a large pot over medium-high heat, brown the sausage and onions for about 4 minutes.
  2. Add the bell peppers, garlic, and red pepper flakes; sauté for another 2–3 minutes.
  3. Stir in the remaining ingredients (except cheeses) and bring to a boil.
  4. Reduce heat and simmer covered for 8–12 minutes until rice is cooked.
  5. Stir in Parmesan cheese; season with salt and pepper to taste.
  6. Serve hot topped with shredded mozzarella.
