Ingredients
- 1 cup Unsalted Butter, room temperature (2 sticks)
- 2 cups All-Purpose Flour
- 1/2 teaspoon Salt
- 1/2 cup Granulated Sugar
- 1/2 pint Fresh Raspberries (or about 1 cup frozen raspberries, thawed)
- 2 1/4 cups Granulated Sugar
- 6 Tablespoons All-Purpose Flour
- 6 Eggs
- 3 Lemons, Juice
Instructions
- Preheat oven to 350°F (175°C). Prepare a 9" x 13" baking pan by greasing it and lining it with parchment paper.
- Blend raspberries with a tablespoon of water until smooth; strain to remove seeds.
- In a mixing bowl, combine butter, flour, salt, and sugar for the crust; mix until smooth and press into the prepared pan. Bake for 15-20 minutes until golden.
- For the filling, whisk together sugar, flour, eggs, and lemon juice in another bowl, then gradually add raspberry puree until light pink in color.
- Pour filling over baked crust and return to oven for an additional 25-30 minutes until edges are set.
