  • 2 lbs Yukon gold potatoes
  • 3 cloves garlic
  • 2 tsp smoked paprika
  • 2 tsp cayenne pepper
  • 12 flour tortillas
  • Oil for frying

Instructions

  1. Parboil the quartered Yukon gold potatoes in salted water until fork-tender (10-15 minutes). Drain.
  2. Mash the cooked potatoes in a large bowl until smooth. Mix in minced garlic, smoked paprika, cayenne pepper, and salt.
  3. Place about 1/2 cup of the potato filling in the center of each tortilla, roll tightly and secure seam-side down.
  4. Heat oil in a fry pan over medium heat. Fry flautas seam-side down for 3-5 minutes on each side until golden brown.
  5. Drain on paper towels and serve hot with salsa or guacamole.
