  • 1 box Yellow Cake mix (15 oz)
  • 1 can Pumpkin Puree (15 oz)
  • 1 tsp Pumpkin Pie Spice
  • ½ cup unsalted butter (softened)
  • 4 oz Cream Cheese (softened at room temperature)
  • 1 tsp Vanilla Extract
  • 1 ½ cup Powdered Sugar
  • 12 oz Orange Candy Melts
  • 6 oz Chocolate Candy Melts
  • 3 Tbsp Vegetable Shortening (divided)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine yellow cake mix, pumpkin puree, pumpkin pie spice, and softened butter. Mix until smooth.
  2. Pour mixture into a greased baking sheet and bake for 30 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  3. Crumble the cooled cake into fine crumbs in a large bowl. In another bowl, mix cream cheese and vanilla extract; gradually add powdered sugar until combined.
  4. Combine cream cheese mixture with cake crumbs until it holds together. Roll into 1-inch balls and refrigerate for 30 minutes.
  5. Melt orange candy melts according to package instructions. Dip each chilled cake ball into the melted candy coating, letting excess drip off before placing on parchment paper.
