- 1.3 lbs ground turkey (extra lean)
- 6 small links chicken maple sausage
- 1 sweet onion (chopped)
- 3 cloves garlic (minced)
- 1 yellow bell pepper (diced)
- 1 orange bell pepper (diced)
- 1 can cannellini beans (15.5 oz, drained and rinsed)
- 1 can red kidney beans (15.5 oz)
- 1 can pumpkin purée (29 oz)
- 1 can diced tomatoes (28 oz)
- 1 bottle pumpkin beer (12 fl. oz.)
- ½ cup chicken broth
- 2 tbsp chili powder
- 1 tsp oregano
- 1 tsp cumin
- 2 tsp brown sugar
- ½ tsp cayenne pepper (optional)
- 4 tbsp olive oil
- Sea salt and pepper to taste
- Sour cream
- Grated cheddar cheese
- Green onions (sliced)
Instructions
- Slice the sausages or remove them from their casings.
- In a large pot, heat olive oil and sauté garlic and onion until translucent. Add bell peppers and sauté for an additional five minutes.
- Brown the ground turkey and sausages in the same pot for about ten minutes, seasoning with salt and pepper.
- Stir in reserved vegetables, diced tomatoes, pumpkin purée, beans, spices, pumpkin beer, and chicken broth.
- Let the mixture simmer on low heat for 1.5 to 2 hours, stirring occasionally.
- Serve hot with toppings like sour cream and cheddar cheese.
