  • 1 1/2 cups pumpkin purée
  • 3/4 cup brown sugar
  • 3/4 cup semi-sweet chocolate chips
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp granulated sugar
  • 2 tbsp maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and line a greased loaf pan with parchment paper.
  2. For the streusel topping, combine softened vegan butter, flour, sugars, and cinnamon in a bowl until crumbly; chill in the fridge.
  3. In a large bowl, mix together pumpkin purée, oil, brown sugar, and maple syrup until smooth.
  4. Sift in flour, pumpkin pie spice, baking powder, baking soda, and salt; fold in chocolate chips gently.
  5. Pour batter into the prepared pan and top with streusel mixture. Bake for 55–60 minutes or until a cake tester comes out clean.
