  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped pecans (for topping)
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F.
  2. In a medium bowl, mix together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves.
  3. In another bowl, combine pumpkin puree, milk, melted butter (or oil), and vanilla extract until blended.
  4. Pour the wet mixture into the dry ingredients and stir gently to form a thick batter. Transfer to an 8-inch casserole dish.
  5. In a separate bowl, combine granulated sugar, brown sugar, and chopped pecans; spread this mixture over the batter.
  6. Carefully pour very hot water over the entire mixture without stirring.
  7. Bake for about 40 minutes until the middle is set.
  8. Allow to cool for 5-10 minutes before serving.
