  • 2 ½ cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon, ground
  • ¼ teaspoon salt
  • ¼ cup milk
  • 2 teaspoons sugar
  • 3 teaspoons corn syrup
  • ½ cup brown sugar (packed)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon vanilla extract
  • ⅓ cup powdered sugar (or icing sugar)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In one bowl, mix the dry ingredients: flour, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. In another bowl, combine melted butter, sugars, eggs, milk, vanilla extract, and pumpkin puree until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. For the filling, beat cream cheese with powdered sugar and vanilla until smooth.
  6. In each muffin cup, add a spoonful of batter, followed by cream cheese filling, then top with more batter.
  7. Sprinkle pecans on top and bake for about 35 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes before transferring to a wire rack.
