- 390 grams filtered water
- 100 grams pumpkin puree
- 530 grams bread flour
- 2 teaspoons fine sea salt
- 1 tablespoon ground cinnamon
- ½ tablespoon pumpkin spice
- ¼ cup sugar
Instructions
- Prepare your starters by taking the inactive sourdough out of the refrigerator to come to room temperature.
- In a large bowl, mix the active starter with 390 grams of water and pumpkin puree until well combined.
- Gradually add both flours until no dry bits remain.
- Fold in sea salt, cinnamon, pumpkin spice, and sugar until fully incorporated.
- Cover and let it bulk ferment for 4-6 hours at room temperature until doubled.
- Shape the dough into a round loaf on a floured surface.
- Place it on parchment paper to proof for another 1-2 hours.
- Preheat your oven to 450°F (232°C) alongside your Dutch oven.
- Bake covered for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden.
