  • 1/2 cup brown sugar (for streusel topping)
  • 1/2 tsp pumpkin pie spice or ground cinnamon (for streusel topping)
  • 1 cup confectioners' sugar (for glaze)
  • 1/4 tsp maple extract (for glaze)
  • 1 Tbsp maple syrup (for glaze)
  • 1 Tbsp milk or cream (for glaze)

Instructions

  1. Preheat oven to 350°F and grease a light metal loaf pan.
  2. Cream softened butter and brown sugar until smooth. Add pumpkin puree and eggs, mixing well.
  3. Incorporate spices, baking soda, baking powder, salt, and flour; mix until just combined.
  4. For the streusel topping, combine melted butter, flour, brown sugar, and pumpkin pie spice until crumbly.
  5. Pour batter into the prepared pan and sprinkle streusel over the top.
  6. Bake for 55-60 minutes or until a toothpick comes out clean. Allow to cool before glazing with a mixture of confectioners' sugar, maple extract, maple syrup, and milk.
