Ingredients

  • 4 cups rice Chex
  • 1 cup peanut butter
  • 1/3 cup powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. In a mixing bowl, combine peanut butter and 1/3 cup powdered sugar. Microwave in 10-second intervals until smooth.
  2. Crush the rice Chex into small pieces in a large bowl, leaving some larger bits for texture.
  3. Mix the peanut butter mixture into the crushed cereal until fully coated, then refrigerate for 30 minutes.
  4. Melt chocolate chips using a double boiler until smooth.
  5. Roll chilled cereal mixture into 1½ tablespoon balls (about 18 truffles).
  6. Coat each ball in melted chocolate and return to the refrigerator to harden.
  7. Once hardened, roll truffles in remaining powdered sugar before serving.
