- 1 cup peanut butter
- 1/3 cup powdered sugar
- 2 cups semi-sweet chocolate chips
- 1/2 cup powdered sugar (for coating)
Instructions
- In a mixing bowl, combine peanut butter and 1/3 cup powdered sugar. Microwave in 10-second intervals until smooth.
- Crush the rice Chex into small pieces in a large bowl, leaving some larger bits for texture.
- Mix the peanut butter mixture into the crushed cereal until fully coated, then refrigerate for 30 minutes.
- Melt chocolate chips using a double boiler until smooth.
- Roll chilled cereal mixture into 1½ tablespoon balls (about 18 truffles).
- Coat each ball in melted chocolate and return to the refrigerator to harden.
- Once hardened, roll truffles in remaining powdered sugar before serving.
