  • 3 cups shredded cabbage (green and red)
  • 1 cup sliced cucumber
  • 1 red bell pepper, thinly sliced
  • 2 tbsp peanut butter or tahini
  • 3 tbsp sesame oil
  • 2 tbsp soy sauce or tamari
  • 2 tsp chili crisp
  • Fresh ginger, grated

Instructions

  1. Heat a skillet over medium-high heat and add the day-old rice with sesame oil, soy sauce, and chili crisp. Stir until heated and slightly crispy.
  2. In a mixing bowl, whisk together sesame oil, peanut butter, soy sauce, rice vinegar, lime juice, honey, chili crisp, and ginger until smooth.
  3. In a large bowl, combine shredded cabbage, cucumber, bell pepper, and toss gently.
  4. Pour the dressing over the vegetables and mix well. Top with crispy rice just before serving.
  5. Garnish with toasted sesame seeds and serve immediately.
