  • 1 cup heavy whipping cream (chilled)
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tsp unflavored gelatin powder (optional)
  • 2 tbsp cold water (if using gelatin)

Instructions

  1. Wash raspberries thoroughly. In a bowl, mix with granulated sugar and lemon juice, then mash gently into a chunky puree.
  2. In a separate bowl, whip chilled heavy cream with an electric mixer until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  3. Carefully fold the raspberry puree into the whipped cream using a rubber spatula. If using gelatin for firmness, dissolve it in cold water before incorporating it into the mixture.
  4. Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set. Garnish with additional raspberries before serving.
