Instructions
- Wash raspberries thoroughly. In a bowl, mix with granulated sugar and lemon juice, then mash gently into a chunky puree.
- In a separate bowl, whip chilled heavy cream with an electric mixer until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Carefully fold the raspberry puree into the whipped cream using a rubber spatula. If using gelatin for firmness, dissolve it in cold water before incorporating it into the mixture.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set. Garnish with additional raspberries before serving.
