  • 2/3 cup seedless raspberry jam
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract (for icing)
  • 1 1/2 teaspoons water

Instructions

  1. In a medium bowl, mix flour, baking powder, and salt.
  2. In a large bowl, cream together softened butter with 1/2 cup sugar and vanilla using an electric mixer for about 2–3 minutes. Add the egg and blend well.
  3. Gradually add the dry mixture until combined; chill the dough for one hour.
  4. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Roll chilled dough into 1-inch balls, coat in remaining sugar, and place on prepared sheets.
  6. Create indentations in each ball using your thumb or a rounded spoon.
  7. Bake for about 13–16 minutes until edges are lightly browned; cool on wire racks.
  8. Melt raspberry jam; spoon into cookie indentations once cooled.
  9. For icing, mix confectioners’ sugar with vanilla extract and water until smooth; drizzle over cookies.
