  • 5 tablespoons low-sodium soy sauce
  • ½ cup diced white onion
  • 1 cup frozen mixed vegetables (peas, carrots)
  • 2 large eggs
  • 1 ½ teaspoons sesame oil
  • 4 teaspoons neutral oil (like avocado or canola; 1 tablespoon + 1 teaspoon, divided)
  • 4 tablespoons butter (divided)
  • 2 teaspoons fresh lemon juice
  • salt (to taste)
  • pepper (to taste)
  • sesame seeds (optional, for garnish)

Instructions

  1. Gather and prepare all ingredients: cut chicken, dice onion, and measure oils and sauces.
  2. Heat sesame oil and neutral oil in a wok over medium-high heat until shimmering.
  3. Stir-fry the chicken pieces for about 5-7 minutes until fully cooked; remove from the pan.
  4. Sauté diced onion and mixed vegetables in the same pan for 3-4 minutes until tender.
  5. Push veggies aside, scramble eggs in the empty space until cooked.
  6. Return chicken to the pan with cooled rice; add soy sauce, lemon juice, and butter. Mix well until heated through.
  7. Serve hot with optional sesame seeds for garnish.
