  • 4 cups vegetable broth, warmed
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese

Instructions

  2. In the same skillet, cook chopped onions until translucent; add minced garlic and cook briefly.
  3. Add Arborio rice, stirring until edges are translucent.
  4. Pour in white wine and stir until absorbed.
  5. Gradually add warm vegetable broth one ladle at a time, stirring frequently until the rice is creamy and al dente (about 18-20 minutes).
  6. Stir in sautéed mushrooms, remaining butter, and Parmesan cheese; season with salt and pepper.
  7. Serve immediately garnished with extra Parmesan if desired.
