- 600 grams roast beef
- Salt and freshly ground pepper
- 1 tablespoon mustard
- 4 tablespoons vegetable oil
- 2 onions
- 1 handful of lettuce (such as arugula or spinach)
Instructions
- Rinse and pat dry the roast beef, then season generously with salt and pepper.
- Sear the beef in 2 tablespoons of heated vegetable oil until golden brown on all sides. Brush with mustard and place on a rack over a roasting pan.
- Preheat the oven to 140°C (275°F) and roast the beef for about 30 minutes until your desired doneness is reached.
- Meanwhile, peel and slice the onions into rings. Sauté them in the same skillet until golden brown.
- Toast the bread slices until golden brown. Layer sandwiches starting with sliced roast beef, followed by sautéed onions and chopped lettuce. Top with another slice of toast, cut in half, and serve immediately.
