  • 2 heads cauliflower
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ cup olive oil
  • 1 teaspoon chopped parsley

Instructions

  1. Preheat your oven to 500°F (260°C) and adjust the rack to the lower third position.
  2. Remove outer leaves and trim the stem from each head of cauliflower. Cut each head in half lengthwise, then slice into 1½-inch thick steaks.
  3. In a small bowl, mix kosher salt, black pepper, garlic powder, and paprika.
  4. Drizzle olive oil over both sides of each steak and sprinkle with the seasoning mixture.
  5. Place steaks on a baking sheet and cover tightly with foil. Bake for 5 minutes, then remove the foil and roast for an additional 10 minutes. Flip each steak and roast until golden brown, about 6 to 8 minutes more.
  6. Transfer to a serving platter, garnish with parsley, and enjoy!
