  • 8 fresh pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 10 oz. sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil for frying

Instructions

  1. Soak pineapple rings in dark and coconut rum for at least 1 hour. Drain and pat dry.
  2. Prepare three bowls: one with flour, one with sweetened coconut flakes, and one combining eggs and coconut milk.
  3. Coat each pineapple ring in flour, then dip in the egg mixture, and finally coat with coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry the coated rings for about 1 minute per side until golden brown. Drain on paper towels.
  5. Mix softened cream cheese with powdered sugar and reserved rum to create the dipping sauce.
