  • 1 egg
  • 1/4 cup mayonnaise
  • 1/2 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 cup panko breadcrumbs
  • 1/4 cup scallions, chopped
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Drain the canned salmon and place it in a medium bowl. Use a fork to flake it into smaller pieces.
  2. Add the egg, mayonnaise, lemon juice, Dijon mustard, panko breadcrumbs, scallions, dill, parsley, garlic powder, salt, and pepper. Gently mix until combined.
  3. Form the mixture into six patties about 1/2 inch thick.
  4. Heat olive oil in a skillet over medium heat. Fry the patties for 3–4 minutes per side until golden brown and crispy.
  5. Serve warm with dipping sauces like tzatziki or remoulade.
