  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) thick caramel sauce (homemade or store-bought)
  • Flaky sea salt, for sprinkling

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, granulated sugar, and vanilla until smooth. Refrigerate for 15 minutes.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt. In another bowl, beat butter and sugars until fluffy. Add egg and vanilla; mix well.
  3. Gradually incorporate dry ingredients into the wet mixture until combined.
  4. Scoop dough, flatten it, place cheesecake filling in the center, seal it up, and shape into balls.
  5. Chill for 20–30 minutes before baking at 350°F (175°C) for 10–12 minutes.
