  • 1 pie crust (refrigerated or homemade)
  • 4 large egg yolks
  • 2 1/2 cups heavy whipping cream
  • 2/3 cup packed light brown sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt for garnish

Instructions

  1. Prepare the pie crust in an 8-inch or 9-inch deep dish pie pan and chill in the fridge.
  2. In a medium saucepan, combine heavy whipping cream, brown sugar, cornstarch, and salt. Heat over medium heat while stirring until boiling.
  3. Remove from heat and temper egg yolks by gradually whisking in hot cream mixture.
  4. Pour tempered egg mixture back into saucepan, add honey and vanilla extract, mixing well.
  5. Pour custard mixture into chilled pie crust.
  6. Bake at 375°F (190°C) for 40-45 minutes until golden brown.
  7. Cool completely on the counter before refrigerating until fully set.
  8. Before serving, sprinkle flaky sea salt on top.
