  • 4 tablespoons butter
  • ½ cup onion, diced
  • 1 teaspoon garlic, minced
  • 6 tablespoons flour
  • 1 cup chicken broth
  • 2 cups milk
  • ½ teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cheddar cheese, grated

Instructions

  1. Preheat the oven to 350°F and spray a 9×13-inch baking pan with nonstick spray.
  2. Thinly slice the potatoes using a mandoline.
  3. In a large saucepan over medium-low heat, melt the butter and sauté the onion and garlic until soft.
  4. Stir in flour for two minutes; then slowly whisk in chicken broth followed by milk until thickened.
  5. Season with salt, pepper, and thyme before stirring in cheddar cheese until melted.
  6. Layer half of the sliced potatoes in the baking pan, season with salt and pepper, and pour half of the sauce over them.
  7. Repeat layering with remaining potatoes and sauce; sprinkle fresh thyme on top.
  8. Cover with foil and bake for 45 minutes; remove foil and bake for an additional 30 minutes until golden brown.
