  • 1 medium sweet onion (finely diced)
  • 3 celery stalks (minced)
  • 4 garlic cloves (minced)
  • 1/4 cup all-purpose flour
  • 3 cups seafood stock
  • 2 cups whole milk (warmed)
  • 1 cup heavy cream
  • 1 pound jumbo shrimp (peeled and deveined)
  • 12 ounces lump crab meat (checked for shells)

Instructions

  1. In a large Dutch oven, melt butter over medium heat. Add onion and celery; sauté until softened (about 5 minutes).
  2. Stir in garlic and cook until fragrant (about 1 minute).
  3. Sprinkle flour over the mixture, stirring constantly to form a roux—cook for about 2 minutes.
  4. Gradually whisk in warmed milk and seafood stock, stirring continuously until smooth.
  5. Add tomato paste, bay leaves, and Old Bay seasoning; simmer for about 5 minutes.
  6. Stir in heavy cream and let it simmer for another 5 minutes until thickened.
  7. Add shrimp and cook until pink (3–4 minutes), then gently fold in crab meat.
  8. Remove bay leaves; adjust seasonings as needed before serving.
