  • 20 oz refrigerated three cheese tortellini
  • 8 tbsp unsalted butter
  • 1/3 cup dry white wine
  • 6 oz seafood or chicken stock
  • 2 cups heavy cream
  • Fresh baby spinach (5 oz)
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Season the shrimp with all-purpose seasoning.
  2. In a large skillet, heat oil over medium-high heat and sear shrimp until pink, about 1-2 minutes per side. Remove and set aside.
  3. In the same skillet, reduce heat to medium-low; deglaze with white wine and add butter and minced garlic. Cook until fragrant.
  4. Stir in flour, then gradually mix in stock, cream cheese, and heavy cream; simmer for 5-7 minutes.
  5. Cook the tortellini according to package instructions; drain.
  6. Add spinach to the sauce until wilted, then mix in crushed red pepper and Parmesan before combining gently with the tortellini and shrimp.
