  • 2 medium zucchini (cubed)
  • 1 onion (cut into ¾ inch pieces)
  • 1 bell pepper (cut into ¾-inch pieces)
  • 4 fully cooked sausages (sliced)
  • Olive or avocado oil
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • 1 tsp garlic (minced)
  • Fresh basil (for garnish, optional)

Instructions

  1. Heat 1 tbsp of oil in a skillet over medium-high heat.
  2. Add sliced sausage and sauté until browned. Remove and set aside.
  3. Lower the heat to medium and add remaining oil with zucchini, onion, and bell pepper.
  4. Season with garlic powder, oregano, basil, onion powder, pepper, and salt; cook until tender (about 5 minutes).
  5. Return sausage to the skillet along with minced garlic; stir and cover for a few minutes to blend flavors.
