  • 1.5 lbs baby potatoes or Yukon Gold potatoes
  • 4 tbsp unsalted butter
  • 6 cloves garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • 1 tsp dried rosemary or 1 tbsp fresh rosemary
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley (for garnish)
  • Grated Parmesan cheese (for garnish)

Instructions

  1. Cut beef into 1-inch cubes and season with salt, black pepper, garlic powder, and smoked paprika.
  2. Optionally sear the beef in olive oil over medium-high heat until browned.
  3. Place seasoned beef and halved potatoes in the slow cooker; sprinkle with additional salt and pepper.
  4. In a bowl, mix melted butter, minced garlic, thyme, rosemary, beef broth, and Worcestershire sauce; pour over the ingredients in the slow cooker.
  5. Cover and cook on low for 8 hours or high for 4 hours until beef is tender and potatoes are cooked through.
