  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can diced tomatoes with green chilies
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 6 tortillas (flour or corn)
  • 1 cup shredded Mexican cheese blend

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked; drain excess fat.
  2. Sauté diced onion in the skillet until softened, then add minced garlic and cook for another minute.
  3. Stir in taco seasoning and diced tomatoes; mix well.
  4. In a slow cooker, layer salsa, tortilla strips, half of the meat mixture, black beans, corn, and repeat layers.
  5. Top with remaining tortilla strips and pour extra salsa on top.
  6. Cook on low for 4-5 hours or high for 2-3 hours.
  7. About 15 minutes before serving, sprinkle cheese on top and let it melt.
