Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning mix
- 1 can diced tomatoes with green chilies
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 6 tortillas (flour or corn)
- 1 cup shredded Mexican cheese blend
Instructions
- In a large skillet over medium-high heat, brown the ground beef until fully cooked; drain excess fat.
- Sauté diced onion in the skillet until softened, then add minced garlic and cook for another minute.
- Stir in taco seasoning and diced tomatoes; mix well.
- In a slow cooker, layer salsa, tortilla strips, half of the meat mixture, black beans, corn, and repeat layers.
- Top with remaining tortilla strips and pour extra salsa on top.
- Cook on low for 4-5 hours or high for 2-3 hours.
- About 15 minutes before serving, sprinkle cheese on top and let it melt.
