  • 2 1/2 lbs baby creamer potatoes (halved)
  • 1 1/2 lbs beef smoked sausage (sliced into 1-inch pieces)
  • 1 large yellow onion (diced)
  • 1 green bell pepper (diced)
  • 2 Tbsp olive oil
  • 2 tsp Slap Ya Mama seasoning
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 4 Tbsp butter (cubed)

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 baking dish.
  2. In a large bowl, toss the halved potatoes with olive oil and seasonings until well coated.
  3. Add smoked sausage, onion, and bell pepper; mix until combined.
  4. Pour the mixture into the baking dish and dot with cubed butter.
  5. Cover tightly with foil and bake for 30 minutes; then remove foil and bake for an additional 15-20 minutes until potatoes are fork-tender.
  6. Let rest for about 5 minutes before serving hot.
