  • 1½ cups cinnamon graham cracker crumbs
  • ½ cup salted butter (melted)
  • 8 oz cream cheese (softened)
  • ½ cup granulated sugar
  • 8 oz whipped topping
  • ¾ cup marshmallow cream
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy whipping cream
  • ¾ cup mini marshmallows
  • ½ cup chopped cinnamon graham crackers
  • ½ cup chopped Hershey chocolate bars

Instructions

  1. Prepare a 9×9 inch baking pan by spraying it with cooking spray or lining it with parchment paper.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of the pan and refrigerate.
  3. Using a mixer, beat cream cheese and sugar until creamy. Add whipped topping and marshmallow cream; mix until well combined.
  4. Spread the cheesecake filling over the chilled crust and return it to the refrigerator.
  5. For ganache, heat heavy cream until bubbles form, then pour over chocolate chips; let sit for three minutes before stirring until smooth.
  6. Pour ganache over cheesecake layer, top with mini marshmallows, chopped graham crackers, and Hershey bars.
  7. Optionally broil for one minute to toast marshmallows lightly.
  8. Chill for at least two hours before slicing into bars.
