  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 1 1/2 cups sugar, plus 3 tbsp for rolling
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 tbsp ground cinnamon for cinnamon sugar coating

Instructions

  1. Preheat oven to 400°F and line baking sheets with parchment paper.
  2. In a bowl, combine flour, cream of tartar, baking soda, and salt; set aside.
  3. Cream together butter and sugar until light and fluffy.
  4. Add eggs one by one, mixing well after each addition. Stir in vanilla.
  5. Gradually mix in dry ingredients until just combined.
  6. In a small bowl, combine 3 tbsp sugar and cinnamon for rolling.
  7. Scoop tablespoon-sized portions of dough and roll into balls; coat in cinnamon sugar.
  8. Place on prepared baking sheets with space between each ball.
  9. Bake for 6-8 minutes until edges are set but centers remain soft.
  10. Cool on the sheet for a few minutes before transferring to a cooling rack.
