  • 2 cups all-purpose flour

  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 4 oz softened cream cheese
  • 3 tbsp softened butter
  • 1 ½ cups powdered sugar
  • 1 tsp pure vanilla extract
  • pinch salt (optional)

Instructions

  1. Preheat your oven to 350°F and line cookie sheets with silicone mats or parchment paper.
  2. In a large mixing bowl, beat softened butter and sugar until fluffy. Add egg, vanilla extract, and pumpkin puree; mix well.
  3. Combine flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice in another bowl. Gradually add to the wet mixture until just combined.
  4. Scoop dough onto prepared sheets, leaving space between each cookie. Bake small cookies for about 12 minutes or larger ones for about 15 minutes until edges are lightly browned.
  5. Cool on the baking sheet for ten minutes before transferring to a wire rack to cool completely.
  6. For frosting: Beat softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until fluffy. Frost cooled cookies generously.
